  • 2 pieces ribeye steaks Choose high-quality cuts for best results.
  • 2 tablespoons olive oil For searing the steaks.
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary or thyme Use fresh herbs for better flavor.
  • to taste Salt and pepper For seasoning the steaks.
  • 1 tablespoon Butter (optional) For finishing the dish.

Preparation

  • Remove the ribeye steaks from the refrigerator and let them rest at room temperature for about 30 minutes.
  • Preheat your oven to 400°F (200°C).
  • Generously season the steaks on both sides with salt and pepper.

Cooking

  • Heat the olive oil in an oven-safe skillet over medium-high heat until shimmering.
  • Sear the ribeye steaks for about 4-5 minutes on each side until a nice brown crust forms.
  • Add the minced garlic and fresh herbs to the skillet around the steaks.
  • If desired, add a tablespoon of butter to the skillet for extra flavor.
  • Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes.
  • Once cooked, remove the steaks from the oven and let them rest for about 5 minutes.
  • Slice the steak against the grain and serve hot.

Notes

Serve with roasted garlic mashed potatoes and a fresh mixed greens salad. Pairs well with a full-bodied red wine.
