  • 0.5 cups vegetable oil Can be substituted with melted coconut oil or applesauce.
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Important for moisture.

  • 8 oz fresh strawberries For garnish.

Instructions
 

Preparation

  • Gather all ingredients on your countertop. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Mixing

  • In a large bowl, combine all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk well to eliminate any lumps.
  • Add eggs, whole milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
  • Carefully stir in the boiling water. The batter will be thin.

Baking

  • Evenly divide the batter between the two prepared cake pans.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.

Assembly

  • Layer the cooled cakes on a serving plate and add whipped cream between the layers and on top.
  • Garnish with fresh strawberries before serving.

  • Slice the cake into generous portions and enjoy!

Notes

Store any uneaten portions in an airtight container. Can be kept at room temperature for a couple of days or refrigerated for longer storage. You can freeze the cake for up to three months.
