Instructions
Preheat oven to 350°F (175°C). Prepare all ingredients and grease a baking dish.
Cook pasta in salted boiling water until al dente, about 8–10 minutes. Drain and set aside.
Sauté diced chicken in a skillet with olive oil, salt, and pepper for 5–7 minutes until cooked through. Set aside.
In a saucepan, melt butter over medium heat. Whisk in flour to create a roux and cook for 1–2 minutes.
Slowly whisk in milk until smooth and thickened, about 5 minutes. Add cream cheese and stir until melted.
Add shredded cheddar cheese and buffalo sauce to the mixture, stirring until creamy and smooth.
Combine pasta, cooked chicken, and cheese sauce in a large bowl. Mix until evenly coated.
Transfer to the baking dish, sprinkle with panko breadcrumbs, and bake for 20–25 minutes until bubbly and golden brown.
Garnish with sliced green onions and serve hot.
Notes
For a spicier version, use extra buffalo sauce or mix in diced jalapeños. Add blue cheese crumbles on top for an authentic buffalo-style flavor.
