Preparation

  • Wash the russet potatoes under running water to remove any dirt. Dry them off with a towel.
  • Using a sharp knife, cut each potato into thick wedges, aiming for about 1-inch thickness.
  • In a large mixing bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, and pepper.

Baking

  • Preheat your oven to 425°F (220°C).
  • Line a baking sheet with parchment paper and spread the seasoned potato wedges in a single layer.
  • Bake for 15-18 minutes.
  • After the initial baking, turn the wedges over and bake for an additional 15-17 minutes.
  • Check for doneness; the fries should be golden and crispy.

Serving

  • Let the fries cool for a couple of minutes before transferring them to a serving platter.
  • Garnish with fresh herbs or additional seasoning if desired.

Notes

Allow leftover fries to cool completely before storing in an airtight container in the fridge. Reheat in the oven for best results. Mistakes to avoid include not soaking the potatoes, overcrowding the baking sheet, and skipping the oil.
