  • 1 whole ripe pineapple, diced Make sure it's ripe for the best sweetness.
  • 2 whole cucumbers, diced English cucumbers are recommended.
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped Can substitute with mint or basil.
  • 2 whole limes, juiced
  • 1 tablespoon honey or agave syrup (optional) For a vegan option, use agave syrup.
  • to taste Salt and pepper Add gradually to taste.

Preparation

  • Gather all ingredients. Dice the pineapple and cucumbers into bite-sized pieces, and finely chop the red onion and cilantro.
  • In a large bowl, gently combine the diced pineapple and cucumbers.
  • Add the finely chopped red onion and cilantro to the bowl, and stir gently.
  • In a small bowl, whisk together the lime juice, honey or agave syrup, and salt and pepper.
  • Pour the dressing over the salad ingredients and toss gently to coat.
  • Cover and refrigerate the salad for at least 30 minutes to chill.
  • Taste the salad after chilling and adjust seasoning if necessary.
  • Serve chilled, scooping into bowls or a large platter.

Notes

Best consumed fresh. Store leftovers in an airtight container in the refrigerator for up to three days.
