  • 1 cup orzo pasta For gluten-free, replace with gluten-free pasta or quinoa.
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced Can replace with other veggies like zucchini or spinach.
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups chicken broth Use vegetable broth for a vegetarian version.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Wash and chop the vegetables: dice the onion and bell pepper, and mince the garlic.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sauté for 5-7 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the ground chicken to the skillet, break into smaller pieces, and cook until fully cooked and browned (about 5-7 minutes).
  • Mix in the can of diced tomatoes (with their juices), chicken broth, Italian seasoning, salt, and pepper. Bring to a gentle boil.
  • Stir in the orzo pasta, ensuring it is evenly distributed. Reduce heat to low, cover, and let it simmer for 10-12 minutes, stirring occasionally.
  • Once cooked, remove from heat and garnish with fresh parsley.

Notes

For added flavor, toast the orzo in olive oil before adding liquids. Adding grated Parmesan just before serving can enhance taste.
