For the filling

  • 1 cup granulated sugar For the filling.
  • 4 large eggs For binding.
  • 1 cup freshly squeezed lemon juice Fresh juice is recommended for best flavor.
  • 1 tablespoon lemon zest Adds freshness and flavor.
  • 1/2 cup fresh strawberries, puréed Blend fresh strawberries until smooth.
  • 1 tablespoon cornstarch To stabilize the strawberry puree.

Instructions
 

Preparation

  • Gather all your ingredients and measure them out.
  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.

Cooking the Base

  • In a mixing bowl, cream the softened butter with 1/2 cup of granulated sugar until light and fluffy.
  • Mix in the flour and salt until just combined, then press firmly into the prepared pan.

Baking

  • Bake the crust for 15-20 minutes until lightly golden.
  • While the crust is baking, whisk together the remaining sugar, eggs, lemon juice, and zest until smooth.
  • Pour the lemon filling over the warm crust.

Preparing Strawberry Swirl

  • Mix puréed strawberries with cornstarch.
  • Drop spoonfuls over the lemon filling and swirl with a knife.

Final Baking

  • Bake for an additional 20-25 minutes until the filling is set but slightly jiggly.
  • Cool at room temperature, then chill in the refrigerator for at least 2 hours.

Serving

  • Dust the cooled bars with powdered sugar, cut into squares, and serve.

Notes

These bars can be made a day in advance. They freeze well for up to three months. Enjoy with whipped cream or vanilla ice cream.
