  • 8 oz tortellini (fresh or frozen)
  • 1 lb steak (sirloin or flank, sliced thin)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup spinach (rinsed)
  • Salt and pepper to taste
  • Parmesan cheese (for serving)

Preparation

  • Begin by preparing all your ingredients. Slice the steak thinly, mince the garlic, halve the cherry tomatoes, and rinse the spinach.

Cooking

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the sliced steak, seasoning it with salt and pepper. Cook the steak until browned—about 3-4 minutes. Remove the steak and set aside.
  • Using the same skillet, add the minced garlic, stirring for around 30 seconds until fragrant.
  • Add the halved cherry tomatoes, stirring occasionally. Cook for about 2-3 minutes until softened.
  • Add the tortellini to the skillet with enough water to cook according to the package directions—generally around 5-7 minutes.
  • Once the tortellini is cooked, stir in the fresh spinach. Cook for an additional 1-2 minutes until wilted.
  • Reintroduce the cooked steak to the skillet and mix well. Allow everything to heat through for about a minute.
  • Serve hot, topped with freshly grated Parmesan cheese.

Notes

To enhance flavor, marinate the steak beforehand or toast the tortellini in the skillet.
