Wet Ingredients

  • 2 large eggs Can replace with flaxseed meal mixed with water for vegan option.
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk or milk Plant-based milk can be used as a substitute.

Main Ingredients

  • 2 cups grated zucchini Make sure to drain before using.
  • 1/2 cup grated cheese Cheddar or preferred cheese.
  • 1/2 cup chopped green onions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Grate 2 cups of zucchini and set aside to drain.

Mix Dry Ingredients

  • In a large bowl, combine drained zucchini, flour, baking powder, baking soda, salt, black pepper, and garlic powder.

Mix Wet Ingredients

  • In a separate bowl, whisk together eggs, vegetable oil, and buttermilk or milk.

Combine Ingredients

  • Pour wet ingredients into the dry mixture. Mix gently until just combined; the batter should be slightly lumpy.
  • Fold in grated cheese and chopped green onions.

Bake

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick comes out clean.

Cooling

  • Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, drain zucchini well and avoid over-mixing the batter. Experiment with seasonings or add-ins for a personalized touch.
