  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 1 can French onion soup (10.5 oz)
  • 1 cup shredded cheddar cheese Feel free to experiment with different cheeses.
  • 1/2 cup sour cream Can be substituted with a plant-based version.
  • 1 tablespoon olive oil For greasing the baking dish.
  • to taste Salt and pepper Always taste the mixture for desired seasoning.
  • 1/2 cup crispy fried onions (optional) Provides a crunchy topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Gather your cooked rice and shredded chicken.
  • In a large mixing bowl, combine the cooked rice and shredded chicken. Pour in the French onion soup and sour cream, mixing until well combined. Add half of the shredded cheddar cheese, then season with salt and pepper to taste.
  • Lightly grease a 9x13 inch baking dish with olive oil.

Assembly

  • Transfer the rice and chicken mixture into the greased baking dish, spreading it out evenly.
  • Sprinkle the remaining half of the cheddar cheese over the top. If using, add the crispy fried onions.

Baking

  • Bake in the preheated oven for 25-30 minutes, until the casserole is hot and bubbling.
  • To ensure doneness, insert a knife into the center—it should come out hot.

Serving

  • Let it sit for a few minutes before serving. Serve warm and enjoy!

Notes

This casserole can be customized with different proteins or vegetables. Leftovers can be stored in the refrigerator for 3-4 days.
