  • 1 pound carrots Fresh, peeled and sliced
  • 2 tablespoons olive oil Can substitute with avocado or melted coconut oil
  • 1 teaspoon salt Adjust based on dietary needs
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder Can substitute with onion powder
  • 1 teaspoon paprika
  • to taste Fresh herbs for garnish Optional

Instructions
 

Preparation

  • Gather all your ingredients and preheat the oven to 425°F (220°C). Rinse the carrots under cold water.
  • Peel and slice the carrots into thick pieces.

Cooking

  • Place the carrot slices in a pot of boiling, salted water and cook for about 10 minutes until tender.
  • Drain the carrots and let them cool slightly.
  • On a baking sheet lined with parchment paper, arrange the carrot slices and gently smash each slice to about half an inch thick.
  • Drizzle the smashed carrots with olive oil, ensuring they are well-coated.
  • Sprinkle with salt, black pepper, garlic powder, and paprika. Mix until evenly coated.
  • Roast the carrot bites in the preheated oven for about 20-25 minutes, flipping halfway through.
  • Let them cool slightly and garnish with fresh herbs before serving.

Notes

Store in an airtight container in the refrigerator for 3-4 days; can also be frozen. To reheat, use an oven at 375°F (190°C) for about 10 minutes.
