Preparation

  • Gather all your ingredients and prep them (slice chorizo, mince garlic, wash spinach).

Cooking Pasta

  • Cook the pasta according to the package instructions until al dente, which typically takes 8-10 minutes. Drain and set aside.

Cooking Chorizo

  • In a large skillet, heat olive oil over medium heat for 1-2 minutes.
  • Add sliced chorizo and cook for 5-7 minutes until browned.

Adding Aromatics

  • Add minced garlic to the skillet and cook for 1 minute until fragrant, ensuring it does not burn.

Incorporating Spinach

  • Stir in fresh spinach and cook for 2-3 minutes or until wilted.

Making the Sauce

  • Pour in heavy cream and simmer for 2-3 minutes, allowing flavors to meld.
  • Stir in grated Parmesan cheese until melted and incorporated.

Combining Ingredients

  • Add drained pasta to the skillet and toss to coat with the sauce. Stir on low heat for another minute.

Final Seasoning and Serving

  • Season with salt and pepper to taste and serve hot, garnished with extra Parmesan if desired.
