Ingrédients
  

Taco Filling

  • 4 large eggs beaten
  • 1/4 cup milk optional, for fluffier eggs
  • 1/2 cup shredded cheese cheddar or your choice
  • 1/4 cup bell peppers diced
  • 1/4 cup onion diced
  • salt and pepper to taste

Tacos

  • 4 small flour or corn tortillas
  • salsa for serving
  • avocado slices optional, for topping

Instructions
 

  • In a mixing bowl, whisk eggs with milk, salt, and pepper.
  • Heat a skillet over medium heat and sauté onions and bell peppers until softened, about 3–4 minutes.
  • Add the eggs to the skillet and cook, stirring gently, until scrambled and just set.
  • Warm tortillas in a separate pan or microwave until pliable.
  • Assemble tacos by dividing scrambled eggs among tortillas, topping with cheese, salsa, and avocado slices if desired.
  • Serve immediately while warm.

Notes

Feel free to add cooked bacon, sausage, or beans for extra protein. These tacos are highly customizable with your favorite toppings.
