Base

  • 1 cup pitted dates Medjool dates recommended; soak if dry
  • 1 cup nuts such as cashews or walnuts, finely chopped or ground
  • 1/2 cup rolled oats optional to help with texture
  • 2 Tbsp cocoa powder optional, for chocolate flavor
  • 2 Tbsp coconut oil or nut butter, helps bind

Optional Add-ins

  • 1 Tbsp chia seeds or flax seeds for extra fiber / protein
  • 1 tsp vanilla extract for flavor

Instructions
 

  • Add the dates, nuts, and oats (if using) to a food processor.
  • Pulse until the mixture starts to stick together, adding cocoa powder and coconut oil (or nut butter) as needed.
  • If desired, add chia or flax seeds and vanilla extract, and pulse again to combine.
  • Roll the mixture into bite-sized balls using your hands or a small scoop.
  • Optional: roll the balls in shredded coconut, cocoa powder, or chopped nuts for coating.
  • Store in an airtight container in the fridge for up to a week, or freeze for longer.
