For the Cookie Dough

  • 2 cups apple cider Reduced to 1/4 cup for use in the dough
  • 20 tablespoons unsalted butter Browned for flavor
  • 2.5 cups all-purpose flour
  • 2 teaspoons apple pie spice or pumpkin spice
  • 1 large egg Room temperature
  • 1.25 cups light brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • to taste ground cinnamon For topping

Preparation

  • Preheat your oven to 375°F (190°C) and prepare your workspace with measuring cups, a mixing bowl, a whisk, baking sheets, and parchment paper.
  • In a saucepan, heat 2 cups of apple cider over medium heat until it reduces to about 1/4 cup.
  • In another saucepan, melt 20 tablespoons of unsalted butter over low heat, stirring continuously until it turns light brown.
  • In a large mixing bowl, whisk together 2.5 cups of all-purpose flour, 1 teaspoon of baking powder, and 2 teaspoons of apple pie spice.
  • Combine the cooled brown butter with 1.25 cups of light brown sugar and 3/4 cup of granulated sugar until well mixed.
  • Add the large egg and the cooled reduced apple cider to the butter and sugar mixture, stirring until smooth.
  • Gradually mix the dry ingredients into the wet mixture until just combined, avoiding overmixing.
  • Drop dough onto a lined baking sheet, leaving 2 inches of space between each cookie.

Baking

  • Bake in the preheated oven for 9-11 minutes until edges are set and centers are slightly soft.
  • Remove from the oven and let cool on the baking sheet for a few minutes.

Finishing Touch

  • Roll warm cookies in a mixture of ground cinnamon and sugar for topping, if desired.

Notes
