Fruits

  • 1 piece apple, diced Choose a firm variety to avoid mushiness.
  • 2 pieces mandarin oranges, peeled and segmented
  • 1 piece banana, sliced
  • 2 pieces kiwis, peeled and diced
  • 1/2 cup pomegranate seeds

Dressing

  • 1 cup Greek yogurt Can substitute with coconut yogurt for a dairy-free option.
  • 1 tablespoon honey Can substitute with agave syrup or maple syrup for a vegan option.
  • 1 tablespoon lemon juice Prevents browning of the fruits.

Instructions
 

Preparation

  • Prep all your ingredients by washing and slicing the fruits.
  • Dice the apple, peel and segment the mandarin oranges, slice the banana, and peel and dice the kiwis.

Combining

  • In a large mixing bowl, combine the prepared apple, mandarin oranges, banana, kiwis, and pomegranate seeds.
  • Stir gently to blend the fruits without breaking them apart.

Making the Dressing

  • In a small bowl, whisk together the Greek yogurt, honey, and lemon juice until smooth and creamy.

Dressing the Salad

  • Pour the yogurt dressing over the mixed fruits and gently toss to combine.
  • Be careful not to mash the fruits.

Chilling and Serving

  • If desired, chill the salad in the refrigerator for about 10 to 15 minutes before serving.
  • Serve immediately in a bowl or on individual plates.

Garnishing

  • Optional: Garnish with mint or additional pomegranate seeds before serving.

Notes

Best enjoyed fresh. To maintain the crispness of the fruit, mix dressing only before serving. Can last up to two days in an airtight container.
