Preparation

  • Start by measuring out all your ingredients. Chop the white chocolate into small pieces for even melting.
  • Wash and dry the raspberries carefully, as excess moisture can affect the texture.

Cooking

  • In a heatproof bowl, combine the chopped white chocolate and heavy cream. Place this bowl over a pot of simmering water (a double boiler works best). Stir occasionally until the chocolate is completely melted and smooth. This process usually takes about 5-7 minutes.
  • Once your chocolate and cream mixture is velvety, gently fold in the fresh raspberries. Be careful not to mash them; you want to keep some intact for that burst of flavor.
  • Sprinkle in the powdered sugar gradually, stirring to combine. The mixture should now be thicker and more cohesive.

Chilling

  • Cover the bowl with plastic wrap and place it in the refrigerator. Let it chill for about 1 hour or until it is firm enough to scoop.
  • Once chilled, use a small scoop or spoon to portion out the mixture. Quickly roll each portion between your palms to form small balls.
  • Have your cocoa powder ready in a shallow dish. Roll each truffle in cocoa powder or powdered sugar to coat them lightly.
  • Place the rolled truffles back in the refrigerator for another 30 minutes to firm up again.

Notes

Store the truffles in an airtight container in the refrigerator for up to two weeks, or freeze for later enjoyment. Consider customizing with nuts or different fruits for a unique twist.
