  • 2 tablespoons fresh lime juice Fresh is preferred over bottled.
  • 1 tablespoon lime zest Essential for the key lime flavor.
  • 2.5 cups all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon baking powder Ensure it’s fresh for proper rising.
  • 0.5 teaspoon salt Balances out sweetness.
  • 1 cup white chocolate chips Can substitute with dark chocolate.

Instructions
 

Preparation

  • Gather all of your ingredients.
  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, followed by fresh lime juice and lime zest until well combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet mixture, mixing until just combined.
  • Fold in the white chocolate chips.
  • Drop spoonfuls of dough onto ungreased baking sheets, spaced about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden, and the centers are set.
  • Allow cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.

Notes

Store in an airtight container for up to five days at room temperature or two weeks in the refrigerator. Cookies can also be frozen for up to three months.
