  • 1 lb ground beef can substitute with ground turkey or plant-based meat
  • 1 packet taco seasoning
  • 1 can black beans drained and rinsed
  • 1 cup corn fresh, frozen, or canned
  • 1 can diced tomatoes use fire-roasted for smoky flavor
  • 2 cups tortilla chips lightly crushed
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream for topping
  • 1/4 cup sliced jalapeños optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Gather all your ingredients.
  • In a skillet, brown the ground beef over medium heat for 5–7 minutes, breaking it apart as it cooks.
  • Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes to combine flavors.
  • In a baking dish, spread half of the tortilla chips at the bottom.
  • Layer half of the beef mixture over the chips, followed by half of the cheese.
  • Repeat the layers with the remaining chips, beef mixture, and cheese.
  • Bake for 20–25 minutes until the cheese is melted and bubbly.
  • Let cool for a few minutes, then top with sour cream and jalapeños before serving.

Notes

Customize your casserole with extra toppings like guacamole, salsa, or green onions. For a lighter version, use ground turkey or omit cheese for a dairy-free option.
