  • 1 cup cooked rice Use any type of cooked rice.
  • 1 cup mushrooms, sliced Any variety of mushrooms can be used.
  • 2 cloves garlic, minced Fresh garlic preferred for best flavor.
  • 1 medium onion, diced Add sweetness with yellow or sweet onion.
  • 1 cup vegetable broth Low-sodium broth is recommended.
  • 1 cup spinach, chopped Fresh spinach gives a better texture.
  • 1 cup shredded cheese (optional) Use mozzarella, cheddar, or a dairy-free alternative.
  • to taste salt and pepper Adjust to personal preference.
  • 1 tablespoon olive oil For sautéing the vegetables.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  • Add the sliced mushrooms and cook until browned and moisture has released, about 5-6 minutes.
  • Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  • In a large mixing bowl, combine the cooked rice with the sautéed vegetables.
  • Pour the vegetable broth into the rice mixture, stirring to combine.
  • Season with salt and pepper to taste.
  • Transfer the mixture into a greased baking dish. If using cheese, sprinkle on top.
  • Bake in the oven for 20-25 minutes or until heated through and slightly golden.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This dish can also be frozen; just let it cool completely before freezing.
