Preparation

  • Start by gathering all your ingredients.
  • In a food processor, combine the dates, almond butter, and maple syrup. Blend until smooth and creamy, about 1-2 minutes.
  • Add the gluten-free oats, chopped peanuts, vanilla extract, and a pinch of salt to the date mixture. Pulse until well combined, with a thick and sticky texture.
  • Line an 8×8-inch baking pan with parchment paper leaving overhang for easy removal.
  • Pour the mixture into the prepared pan. Use your hands or a spatula to press it down evenly and compactly.
  • Place the pan in the freezer for about 30 minutes to help the bars hold their shape.
  • Melt the dark chocolate in a microwave-safe bowl in 20-second intervals, stirring in between until smooth.
  • After the base has firmed up, drizzle the melted chocolate evenly over the top.
  • Allow the chocolate to set slightly, then lift the mixture out using the parchment paper and cut into bars of your desired size.
  • Serve immediately or store for later enjoyment. Best enjoyed chilled.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. For a nut-free version, substitute nut butters and peanuts with seed alternatives.
