  • 1 large large tortilla
  • 1/2 cup refried beans Can substitute with hummus or avocado mash
  • 1/4 cup vegan cheese May substitute with more veggies if desired
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded lettuce
  • 1/4 cup diced onions
  • 1/4 cup guacamole Or substitute with vegan sour cream
  • 1 tablespoon taco seasoning Essential for flavor
  • 1 tablespoon oil for cooking For frying the crunchwrap

Preparation

  • Gather all your ingredients in one place to streamline the cooking process.
  • Chop your vegetables finely and measure out the refried beans and cheese.

Cooking

  • In a medium bowl, mix the refried beans with taco seasoning.
  • Lay the large tortilla flat on a plate. Spoon the seasoned refried beans into the center, smoothing them out.
  • Layer in your vegan cheese, diced tomatoes, shredded lettuce, diced onions, and guacamole.
  • Gently fold the edges of the tortilla toward the center, creating pleats to keep everything tightly packed.
  • Warm the tablespoon of oil in a skillet over medium heat.
  • Place the folded tortilla seam side down in the skillet. Cook for about 3–4 minutes until golden brown.
  • Carefully flip the crunchwrap to cook the other side for another 3–4 minutes.
  • Remove from skillet and let cool for a moment before cutting in half.
  • Serve warm to enjoy all the flavors.

Notes

Can be stored in airtight containers and kept for up to 3 days in the fridge, or frozen for up to a month. Reheat in skillet or microwave.
