For the Shrimp

  • 1 pound shrimp, peeled and deveined

For the Salad

  • 4 cups mixed greens, washed and dried
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 2 tablespoons fresh lemon juice

For the Dessert

  • 8 ounces semi-sweet or dark chocolate Use dairy-free chocolate for vegan option
  • 1 pound strawberries, washed with tops removed

Preparation

  • Wash the mixed greens, cherry tomatoes, and strawberries. Peel and devein the shrimp if not already prepared.

Cooking

  • In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the shrimp with salt and pepper.
  • Once the oil is hot, add the shrimp to the pan and sauté for about 3-5 minutes until they turn pink and opaque. Remove from heat and set aside.

Making the Salad

  • In a large mixing bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber. Drizzle with the remaining olive oil and lemon juice. Toss gently until everything is coated evenly.

Preparing the Dessert

  • Using a double boiler or microwave, melt the chocolate gently until smooth.
  • Dip each strawberry into the melted chocolate, coating it about halfway. Allow excess chocolate to drip off before placing them on a parchment-lined baking sheet.
  • Let the strawberries sit at room temperature until the chocolate hardens, or place them in the refrigerator for faster results.

Serving

  • On individual plates, arrange a serving of the sautéed shrimp alongside a generous portion of the salad.
  • Serve the beautifully plated dish to your loved one, accompanied by the chocolate-covered strawberries for dessert.
