Preparation

  • Start by washing and chopping all the vegetables you’ll need. Measure out your spices and keep them nearby for easy access.
  • Heat the cooking oil in a frying pan over medium heat. Once hot, add cumin seeds and let them sizzle, releasing their flavor.
  • Add chopped onions and sauté until they turn golden brown.
  • Introduce minced garlic and grated ginger into the pan. Sauté for about 2-3 minutes until fragrant.
  • Pour in the chopped tomatoes. Cook until they start breaking down, which should take around 5-7 minutes.
  • Once the tomatoes have softened, sprinkle in turmeric powder, coriander powder, and salt. Stir well to combine.
  • If using chicken, add the pieces now and sauté until thoroughly cooked, about 10-15 minutes.
  • Add coconut milk to the pan, stirring gently to combine everything. Allow to simmer for about 10 minutes.
  • Add slit green chilies and sprinkle garam masala. Let it simmer for another 5 minutes.
  • While the curry simmers, rinse the basmati rice until the water runs clear. Cook according to package instructions.
  • Finish by garnishing your dish with freshly chopped cilantro and serving it hot with the rice.

Notes

Best served with naan or roti and a refreshing cucumber salad. A perfect drink pairing is Masala Chai or lassi.
