For the Dip

  • 8 oz smoked Gouda cheese, grated
  • 1 cup cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1/2 cup sour cream Can substitute with lactose-free options.
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Preparation

  • Start by gathering all ingredients. Grate the smoked Gouda cheese if it’s not pre-grated. Chop the onion finely for even cooking.
  • Heat olive oil in a medium pan over medium heat. Once hot, add the finely chopped onion. Sauté until the onions are caramelized, which should take about 10-15 minutes, stirring occasionally to prevent burning.

Mix and Bake

  • In a large mixing bowl, combine the grated smoked Gouda cheese, softened cream cheese, and sour cream. Make sure everything is at room temperature for easy mixing.
  • Sprinkle in garlic powder, and season with salt and pepper. Mix thoroughly to combine all ingredients well.
  • Once the onions are perfectly caramelized and slightly cooled, fold them into the cheese mixture. Ensure everything is incorporated evenly.
  • Spoon the combined mixture into a baking dish, spreading it out evenly.
  • Place the baking dish in a preheated oven at 350°F. Bake for about 20-25 minutes, or until bubbly and golden on top.
  • Keep an eye on the dip as it bakes. You want it to be golden brown but not burnt. The bubbling is a good sign that it’s ready.
  • Once baked, remove the dish from the oven and let it sit for a few minutes. Serve warm to keep the gooey consistency.

Notes

For added depth, consider mixing in some herbs like thyme or rosemary. Topping with crispy bacon or breadcrumbs before baking can enhance texture. Can be prepared a day ahead and stored in the fridge.
