Preparation

  • Start by gathering all your ingredients. Having everything ready makes the process smoother and ensures you don’t forget anything.
  • Place the eggs in a single layer in a saucepan and cover them with cold water by about one inch. Bring the water to a rolling boil over high heat.
  • Once boiling, remove from heat, cover, and let it sit for exactly 12 minutes.
  • After 12 minutes, drain the hot water and immediately fill the pan with ice water. This chilling process helps cool the eggs completely, about 15 minutes, making them easier to peel.
  • Once cooled, gently tap each egg on a hard surface and roll it lightly to crack the shell. Peel under running water for easier removal. Set the peeled eggs aside.

Filling

  • Carefully slice each egg in half lengthwise. Take your time to ensure a clean cut, which will help present the filled eggs beautifully.
  • Using a spoon, gently scoop the yolks into a mixing bowl, leaving the egg white halves intact on a serving platter.
  • With a fork, mash the yolks until they are completely smooth and crumbly.
  • Add the mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks. Mix thoroughly until the filling is smooth and creamy, checking for taste and adjusting seasonings as needed.
  • Spoon or pipe the yolk mixture back into the hollowed-out egg white halves.
  • Finish by gently sprinkling paprika over each deviled egg half. If desired, add chopped chives or dill for an extra touch of flavor and color.
