Cake Batter

  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Frosting

  • 1 cup chocolate frosting store-bought or homemade

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes until smooth.
  • Stir in boiling water carefully; the batter will be thin but that’s normal.
  • Divide the batter evenly between pans and bake 30–35 minutes, until a toothpick comes out clean.
  • Cool cakes for 10 minutes in the pans, then remove and cool completely on a wire rack.
  • Frost with chocolate frosting once completely cooled. Layer frosting between cakes for extra indulgence.

Notes

Store leftovers in an airtight container for up to 4 days in the fridge or freeze for up to 1 week. For a vegan or gluten-free version, use plant-based milk, flax eggs, and gluten-free flour.
