Ingrédients
  

Tuscan Sauce

  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 tsp red pepper flakes optional
  • 400 g chopped tomatoes 1 can
  • 2 cups butter beans cooked or canned, drained and rinsed
  • 0.5 cup vegetable broth
  • 0.25 cup heavy cream
  • 1 tsp Italian seasoning
  • salt and black pepper to taste
  • 2 cups fresh spinach
  • grated Parmesan cheese optional, for serving

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and sauté until fragrant.
  • Add chopped tomatoes, butter beans, vegetable broth, Italian seasoning, salt, and pepper.
  • Bring to a gentle simmer and cook for 10–12 minutes, stirring occasionally.
  • Stir in heavy cream and fresh spinach. Cook until spinach wilts and sauce thickens slightly.
  • Taste and adjust seasoning as needed.
  • Serve warm, topped with grated Parmesan cheese if desired.

Notes

Serve with crusty bread or over rice or pasta. For a vegan version, replace cream with plant-based cream.
