  • 1 medium green bell pepper, diced

Preparation

  • Gather all your ingredients. Chop the onion, dice the bell pepper, and cut the tomatoes into small cubes.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion to the pan and sauté for about 3-4 minutes until translucent.
  • Once the onions are softened, add the diced green bell pepper and cook for an additional 2-3 minutes.
  • Add the diced tomatoes to the skillet and cook until softened, about 3-5 minutes.
  • Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
  • Pour the beaten eggs into the pan, stir gently to combine, and let it cook for a few moments without stirring.
  • Scramble the eggs using a spatula, cooking for around 3-5 minutes until just set but still soft.
  • Taste and adjust seasoning with salt and pepper. Optionally, add fresh herbs before serving.

Serving

  • Remove the skillet from heat and transfer the Turkish Egg Scramble to plates. Serve hot.

Notes

This dish is versatile; serve with crusty bread, flatbreads, or over rice. You can customize by adding spices like paprika or cumin, or substitute vegetables based on preference.
