  • 1 pound ground turkey
  • 2 cups fresh spinach, chopped
  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil for cooking
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

  • 1/4 cup grated Parmesan cheese (optional) can be omitted for dairy-free option

Instructions
 

Preparation

  • Gather all the necessary ingredients including onion, garlic, mushrooms, and spinach.
  • Chop onion and garlic, slice mushrooms, and roughly chop spinach.

Cooking

  • In a large skillet, heat olive oil over medium heat and add the chopped onion and minced garlic. Stir for about 2-3 minutes until translucent.
  • Add the ground turkey, breaking it up with a spatula. Stir occasionally for about 5-7 minutes until browned and no longer pink.
  • Mix in sliced mushrooms, dried oregano, paprika, salt, and pepper. Cook for another 5 minutes until mushrooms soften.
  • Stir in chopped spinach and cook for 2-3 minutes until wilted.
  • Taste and adjust seasoning. Optionally, sprinkle with Parmesan cheese before serving.

Notes

Let cool completely before storing in airtight containers. Great for meal prep and can be stored in the refrigerator for up to 3 days or frozen for 3 months.
