  • 1 1/2 cups all-purpose flour can substitute with a gluten-free flour blend
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Optional Add-ins

  • 1/2 cup nuts chopped walnuts or pecans
  • 1/2 cup chocolate chips
  • to taste frosting for topping, optional

Instructions
 

Preparation

  • Ensure you have all your ingredients ready, measured, and set aside.
  • Preheat your oven to 350°F (175°C).
  • Grease your baking dish or line it with parchment paper.

Mixing

  • In a large mixing bowl, combine pumpkin puree, sugar, eggs, vegetable oil, and vanilla extract; mix until smooth and creamy.
  • In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined.
  • Fold in nuts or chocolate chips, if desired.

Baking

  • Pour the batter into the prepared baking dish and smooth the top.
  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Cooling and Serving

  • Let the treats cool in the dish before cutting into squares and serving.

Notes

Store in an airtight container at room temperature for up to two days, or in the fridge for about a week. They freeze well for up to three months.
