Casserole Base

  • 1 bag tater tots
  • 6 large eggs
  • 1 cup milk Dairy or dairy-free alternative
  • 2 cups shredded cheese Cheddar or your choice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Optional Add-Ins

  • 1/2 cup diced onion Optional
  • 1/2 cup cooked and crumbled bacon or sausage Optional

Instructions
 

Preparation

  • Gather all your ingredients. Preheat your oven to 350°F (175°C). If using onion or meat, chop or cook them in advance.

Mix Ingredients

  • In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Layer Casserole

  • Grease a baking dish. Layer half of the tater tots on the bottom of the dish.
  • Pour half of the egg mixture over the tater tots.
  • Sprinkle half of the shredded cheese and any add-ins (onions, bacon, or sausage) over the egg mixture.
  • Repeat the layers with the remaining tater tots, egg mixture, and cheese.

Bake

  • Bake in the preheated oven for 35-45 minutes, until the eggs are fully set and the top is golden and bubbly.

Serving

  • Let the casserole cool for a few minutes before slicing into squares to serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be reheated in the oven or microwave. For a vegan version, substitute eggs and cheese with silken tofu and dairy-free alternatives. To ensure gluten-free, confirm tater tots are gluten-free.
