Vegetables

  • 1 cup bell peppers, chopped (assorted colors)
  • 1 cup zucchini, chopped
  • 1 cup eggplant, chopped
  • 1 cup red onion, chopped

Marinade

  • ¼ cup olive oil Can be substituted with light olive oil or lemon juice.
  • 2 tablespoons balsamic vinegar Apple cider or red wine vinegar can be used as substitutes.
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • optional Fresh herbs (basil or thyme) for garnish

Instructions
 

Preparation

  • Begin by washing and chopping your vegetables into bite-sized pieces.
  • In a mixing bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  • Add the chopped veggies to the marinade and coat them well. Let marinate for at least 15 minutes.

Grilling

  • Preheat your grill to medium-high heat.
  • Once the grill is ready, place skewers or veggies directly on the grill.
  • Cook for about 10-15 minutes, turning occasionally to ensure even cooking.
  • Carefully remove the grilled vegetables from the grill.

Serving

  • Garnish the Tasty Grilled Veggies with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-5 days. Best enjoyed fresh off the grill, but can be reheated gently on the stove or in a microwave.
