Preparation

  • Start by prepping your Brussels sprouts. Halve them for even roasting.
  • Preheat your oven to 400°F (200°C).

Mixing the Dressing

  • In a bowl, combine the olive oil, tahini, lemon juice, minced garlic, salt, and pepper. Stir until smooth.

Roasting

  • In a large bowl, add the halved Brussels sprouts and pour the tahini mixture over them. Toss until well coated.
  • Line a baking sheet with parchment paper and spread the coated Brussels sprouts in a single layer.
  • Roast for 25 to 30 minutes, or until golden brown and crisp.

Finishing Touches

  • Once roasted, sprinkle grated Parmesan cheese over the hot Brussels sprouts, allowing it to melt slightly.
  • Transfer to a serving dish and garnish with freshly chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a 350°F oven for about 10 minutes.
