  • 3 cups Mexican blend cheese Experiment with different cheese types for added flavor

Preparation

  • Gather all your ingredients. Dice the onion and measure out the garlic, taco seasoning, corn, and tomatoes. Crushing the Doritos in advance helps speed up the assembly process.
  • In a skillet over medium heat, cook the ground beef with the diced onion until the meat is browned and the onion is translucent—about 5-7 minutes. Drain any excess grease.
  • Stir in the minced garlic and sauté for an additional minute until fragrant.
  • Mix in the frozen corn, taco seasoning, and undrained diced tomatoes. Stir well and let it simmer for about 5 minutes.
  • Remove the skillet from heat, then fold in 2 cups of crushed Doritos.
  • Gently fold in the sour cream and 2 cups of Mexican blend cheese.
  • Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Place the dish in your preheated oven and bake for 5 minutes.
  • Remove the casserole from the oven and sprinkle the remaining cheese and crushed Doritos on top.
  • Return it to the oven for another 5 minutes or until the cheese is fully melted and bubbly.
  • Allow your Taco Doritos Casserole to cool slightly before serving.

Notes

To store leftovers, let cool completely before transferring to an airtight container. Can be frozen before initial baking.
