  • ¾ cup water

For frying

  • 1 cup vegetable oil For frying tortillas.
  • 8 pieces taco-sized flour tortillas Can use corn tortillas for gluten-free.

For the pizza assembly

  • 15 ounces can refried beans
  • 10 ounces can enchilada sauce
  • 2 cups shredded Mexican cheese blend Can substitute with non-dairy cheese.
  • 1 cup diced tomatoes For topping.
  • ½ cup sliced green onion For topping.
  • ½ cup sliced black olives For topping.
  • 1 cup sour cream For serving.

Preparation

  • Gather all your ingredients. Chop the fresh toppings like tomatoes and green onions, and measure your spices and sauces.

Cooking the Base

  • In a medium skillet over medium heat, brown the ground beef. Drain any excess fat and mix in taco seasoning and water. Simmer for 5-10 minutes.

Frying the Tortillas

  • In another skillet, heat vegetable oil on medium-high. Fry each tortilla for 3-4 minutes on each side until crispy and golden brown.

Heating the Beans

  • Microwave the can of refried beans for 1-2 minutes to make it smooth and spreadable.

Assembling the Pizza

  • Spread a layer of refried beans on a fried tortilla. Top with seasoned beef, add another tortilla, drizzle with enchilada sauce, and sprinkle with cheese.

Baking the Pizza

  • Preheat the oven to 400°F. Bake assembled pizzas for 8-10 minutes until cheese has melted and is bubbling.

Adding Toppings

  • Let the pizzas cool for a moment, then add fresh toppings like diced tomatoes, green onions, and sliced olives.

Serving

  • Slice the pizzas into quarters and serve hot with sour cream on the side.

Notes
