Ingrédients
  

Sweet Potato Base

  • 2 medium sweet potatoes cut into 1 cm rounds
  • 1 tbsp olive oil
  • 1/2 tsp salt

Topping

  • 120 g goat cheese soft or crumbled
  • fresh thyme for garnish
  • 2 tbsp honey (or maple syrup for vegan)
  • chopped pecans (optional) for crunch

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Place the sweet potato rounds on a baking sheet, drizzle with olive oil, sprinkle with salt, and toss to coat evenly.
  • Bake for 20–25 minutes until tender and lightly golden.
  • Remove from the oven and top each round with a spoonful of goat cheese while warm.
  • Sprinkle fresh thyme, drizzle with honey, and add chopped pecans if desired.
  • Return to the oven for 2–3 minutes to slightly warm the cheese, then serve.

Notes

For a vegan version, swap goat cheese with a cashew-based cheese and use maple syrup instead of honey.
