Instructions
Preheat the oven to 200°C (400°F).
Place the sweet potato rounds on a baking sheet, drizzle with olive oil, sprinkle with salt, and toss to coat evenly.
Bake for 20–25 minutes until tender and lightly golden.
Remove from the oven and top each round with a spoonful of goat cheese while warm.
Sprinkle fresh thyme, drizzle with honey, and add chopped pecans if desired.
Return to the oven for 2–3 minutes to slightly warm the cheese, then serve.
Notes
For a vegan version, swap goat cheese with a cashew-based cheese and use maple syrup instead of honey.
