Ingrédients
  

For the Chicken and Vegetables

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets
  • 1/4 cup green onions, chopped

For the Sauce

  • 1/3 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder

For the Rice and Cooking

  • 1 cup uncooked jasmine rice
  • 2 tablespoons vegetable oil For cooking
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Preparation

  • Gather all your ingredients. Cut the chicken into bite-sized pieces and slice the bell peppers. Chop the green onions.

Cooking the Rice

  • Cook jasmine rice according to package instructions. Combine 1 cup of rice with 2 cups of water in a pot, bring to a boil, then cover and reduce to low heat for about 15 minutes. Let it rest for another 5 minutes off the heat.

Cooking the Chicken

  • Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Ensure the oil is hot before adding the chicken pieces.
  • Add the chicken to the skillet, seasoning it with salt, pepper, garlic powder, and ginger powder. Cook for about 6-8 minutes, or until the chicken is golden brown and cooked through.

Adding Vegetables

  • Once the chicken is cooked, add the sliced bell peppers and broccoli florets. Stir-fry for approximately 4-5 minutes until the vegetables are tender-crisp.

Mixing the Sauce

  • In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, and rice vinegar.

Combining

  • Pour the sauce over the chicken and vegetables in the skillet. Stir well and allow to simmer for about 2-3 minutes.

Serving

  • Divide the fluffy jasmine rice into serving bowls. Top each bowl with the sweet chili chicken and vegetable mixture. Garnish with chopped green onions and sesame seeds.

Notes

For extra crunch, toss in some cashews or peanuts. Marinate the chicken in sweet chili sauce for added flavor before cooking. Experiment with different vegetables based on availability.
