  • 1 lb chicken breast, diced into bite-sized pieces
  • 1/2 cup sweet chili sauce Try using homemade for added flavor
  • 2 tablespoons soy sauce Use tamari for a gluten-free version
  • 1 tablespoon olive oil Or sesame oil for a nutty flavor
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced Fresh adds the best flavor
  • 1/4 cup green onions, finely chopped
  • Salt and pepper to taste

Preparation

  • Wash and dice the chicken breast into bite-sized pieces. Mince the garlic and ginger, and chop the green onions.
  • Measure out the sweet chili sauce and soy sauce for easy access.

Cooking

  • In a medium-sized pan, heat the olive oil over medium heat. Once hot, add the minced garlic and ginger, sauté for about a minute until fragrant.
  • Add the diced chicken breast to the pan. Sprinkle with salt and pepper. Cook the chicken for 5–7 minutes, turning occasionally until it’s browned and cooked through.
  • Once the chicken is cooked, pour in the sweet chili sauce and the soy sauce. Stir well to coat all the chicken pieces evenly. Let it simmer for about 5 minutes.
  • After the sauce has thickened slightly, add the chopped green onions to the pan. Stir and let everything cook together for an additional 2 minutes.
  • Before serving, taste the Sweet Chili Chicken and adjust with more salt or pepper if desired.

Serving

  • Serve the Sweet Chili Chicken hot over prepared rice or noodles.

Notes

Sweet Chili Chicken is perfect for meal prep and leftovers, storing well for up to 3–4 days in the fridge or three months in the freezer.
