For the Stuffing

  • 16 large white or cremini mushrooms Choose large mushrooms for better stuffing.
  • 8 oz cream cheese Use softened cream cheese.
  • 1/2 cup cooked sausage or crumbled bacon Can substitute with ground turkey or plant-based sausage.
  • 1/4 cup grated Parmesan cheese Nutritional yeast can be used as a dairy-free substitute.
  • 1 clove garlic Minced.
  • 1 tablespoon fresh parsley Chopped.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Decoration

  • 16 small olives Pitted, for 'pupils'.

For Greasing

  • Cooking Spray or Olive Oil for greasing Prevents sticking.

Instructions
 

Preparation

  • Clean your kitchen area and gather all your ingredients.
  • Preheat your oven to 375°F (190°C) and greasing a baking sheet.

Mushroom Preparation

  • Clean the mushrooms with a damp cloth and remove the stems.
  • Chop the mushroom stems and set the caps aside.

Making the Filling

  • In a mixing bowl, combine chopped mushroom stems, cream cheese, sausage (or bacon), Parmesan, garlic, parsley, salt, and pepper.
  • Mix until well combined and smooth.

Stuffing the Mushrooms

  • Spoon the filling into each mushroom cap, packing it tightly.

Baking

  • Arrange the stuffed mushrooms on the baking sheet and press an olive into each to create the 'pupil'.
  • Bake for about 20-25 minutes until bubbly and golden.

Serving

  • Allow to cool slightly before serving and arrange on a platter.

Notes

These stuffed mushrooms are great for Halloween parties, family movie nights, and can be prepared a day in advance.
