Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup marinara sauce Feel free to use homemade or your preferred brand.
  • 1 cup breadcrumbs Substitute with gluten-free breadcrumbs if needed.
  • 2 pieces eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Instructions
 

Preparation

  • Gather all your ingredients.
  • Clean and pat dry the chicken breasts.
  • Take each chicken breast and carefully slice a pocket into the side.

Mixing

  • In a bowl, combine mozzarella and Parmesan cheese.

Stuffing

  • Stuff each chicken breast pocket with the cheese mixture.
  • Sprinkle garlic powder, Italian seasoning, salt, and pepper on each stuffed chicken breast.

Coating

  • Dip each stuffed chicken breast in the egg wash and then coat with breadcrumbs.

Cooking

  • Heat olive oil in a skillet over medium heat and brown each side of the chicken for about 3-4 minutes.
  • Transfer the browned chicken to a baking dish.
  • Pour marinara sauce over the chicken and bake in a preheated oven at 375°F (190°C) for 25-30 minutes.

Notes

Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for longer storage. Reheat in the oven to maintain texture.
