Preparation

  • Gather all your ingredients and wash the celery stalks thoroughly under cold water.
  • Pat the celery dry with a kitchen towel.
  • Cut the celery stalks into 3-inch pieces.
  • In a mixing bowl, combine cream cheese, shredded cheddar cheese, green onions, diced bell pepper, garlic powder, salt, and pepper. Mix until smooth.
  • Taste the filling and adjust seasoning as needed.

Stuffing

  • Fill each celery piece generously with the cheese mixture using a spoon or piping bag.
  • Cover and chill the stuffed celery in the refrigerator for at least 30 minutes.
  • Optionally, cut the stuffed celery in half for easier serving.
