  • 2 cups fresh strawberries, hulled and sliced Ensure strawberries are fresh and not overripe.
  • 1/2 cup lemon juice, freshly squeezed Use fresh lemon juice for the best flavor.
  • 1 each zest of 1 lemon Zest adds more lemon flavor.
  • 1/4 cup fresh mint leaves, chopped Rinse mint leaves to remove any grit.
  • 1/2 cup sugar (adjust as per taste) Can substitute with honey or agave syrup.
  • 1 cup water

Preparation

  • Start by washing your strawberries under cold running water. Remove the hulls and slice them into smaller pieces for easy blending. Zest the lemon with a fine grater and chop the fresh mint leaves.

Blending

  • In your blender, add the sliced strawberries, lemon juice, lemon zest, chopped mint, sugar, and water. Blend everything until the mixture is smooth.

Taste and Adjust Sweetness

  • Once blended, taste the mixture. Depending on the sweetness of your strawberries, add more sugar if desired and blend again briefly.

Freezing

  • Pour the blended mixture into a shallow dish. Place it into your freezer and allow it to freeze for about one hour until it starts to firm up.
  • After an hour, take the dish out and use a fork to stir the mixture, breaking up any ice crystals.
  • Return the dish to the freezer and repeat the stirring process every 30 minutes for 3-4 hours until fully frozen.

Serving

  • Once the sorbet is frozen to your liking, give it one last stir. Serve immediately for a soft, creamy texture or keep frozen until ready to serve.

Notes

Serve with lemon pound cake or fresh fruit skewers. For storage, keep in an airtight container to maintain texture and prevent freezer burn.
