Preparation

  • Start by gathering all your ingredients. Make sure the butter is melted and allow it to cool slightly.
  • Wash and chop the fresh strawberries, and zest your lemon for that aromatic touch.

Baking

  • Preheat your oven to 350°F (175°C). While the oven is heating, grease a 9x13 inch baking pan to prevent the blondies from sticking.
  • In a large mixing bowl, combine the melted butter and brown sugar. Mix well until fully integrated.
  • Add the eggs and vanilla extract, continuing to mix until the batter is smooth.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry mixture into the wet ingredients. Stir gently until just combined. Don’t over-mix; a few lumps are okay for a soft texture.
  • Gently fold in the chopped strawberries, lemon zest, and lemon juice into the batter.
  • Pour the batter into your prepared baking pan. Use a spatula to spread it evenly across the pan.
  • Place the pan in the preheated oven and bake for 25-30 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  • Once golden brown, remove the pan from the oven and let it cool for at least 10 minutes.
  • Cut the blondies into squares and serve! They can be enjoyed warm or at room temperature.

Notes

Store leftover blondies in an airtight container at room temperature for up to 3 days or refrigerate for about a week. For longer storage, freeze wrapped blondies for up to three months.
