  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh strawberries Best with fresh strawberries in season.

For the Cheesecake Filling

  • 1 package (8 oz) cream cheese, softened A vegan alternative can be used.
  • 1/2 cup powdered sugar

Preparation

  • Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
  • Whisk the all-purpose flour, cornstarch, baking soda, and salt together in a separate bowl.
  • Gradually add the dry ingredients to the butter and sugar mixture and mix on a low setting until just combined.
  • Gently fold in the diced fresh strawberries.
  • Roll the dough into balls, about 1-2 inches in diameter, and place them on the prepared baking sheets.

Baking

  • Bake the cookies for 10-12 minutes until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.

Filling

  • In a medium bowl, mix together the softened cream cheese and powdered sugar until smooth and creamy.
  • Once the cookies are completely cool, create a small indentation in the center of each cookie and fill with the cheesecake mixture.
