For the spaghetti squash

  • 1 medium spaghetti squash

For the steak and sauce

  • 1 lb steak, sliced
  • 1 cup heavy cream
  • 1 cup Gorgonzola cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and remove the seeds.

Cooking the Squash

  • Drizzle the cut sides of the squash with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes.

Cooking the Steak

  • While the squash roasts, heat olive oil in a skillet over medium-high heat. Sear the sliced steak for about 3-5 minutes until browned.
  • Add minced garlic and sauté for about 1 minute until fragrant.

Making the Sauce

  • Pour in the heavy cream and simmer. Gradually add Gorgonzola cheese while stirring until creamy.

Finishing the Squash

  • After roasting, flip the squash and scrape the flesh into strands resembling spaghetti.

Combining Ingredients

  • Add the spaghetti squash strands to the skillet with the sauce and steak. Toss gently to coat.

Serving

  • Transfer to plates and garnish with additional Gorgonzola or fresh herbs. Serve immediately.

Notes

Best served with a light salad or garlic bread. Can be customized with different cheeses or proteins based on preferences.
