Instructions
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
Fold wet ingredients into dry ingredients until just combined.
In a small bowl, beat cream cheese with powdered sugar until smooth.
Spoon muffin batter halfway into each liner. Add a dollop of cream cheese mixture, then cover with more batter (about 3/4 full).
Bake for 20-22 minutes, until golden and a toothpick inserted comes out clean.
Cool for a few minutes in the pan, then transfer to a wire rack. Serve warm or at room temperature.
Notes
For a festive touch, sprinkle muffins with pumpkin seeds or a cinnamon sugar topping before baking.
