Ingrédients
  

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 4 oz cream cheese softened
  • 2 tbsp powdered sugar

Instructions
 

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  • In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
  • Fold wet ingredients into dry ingredients until just combined.
  • In a small bowl, beat cream cheese with powdered sugar until smooth.
  • Spoon muffin batter halfway into each liner. Add a dollop of cream cheese mixture, then cover with more batter (about 3/4 full).
  • Bake for 20-22 minutes, until golden and a toothpick inserted comes out clean.
  • Cool for a few minutes in the pan, then transfer to a wire rack. Serve warm or at room temperature.

Notes

For a festive touch, sprinkle muffins with pumpkin seeds or a cinnamon sugar topping before baking.
