  • 1.5 teaspoons salt

  • 2-3 units jalapeños, seeded and finely diced Adjust amount based on spice preference.

Preparation

  • Gather your ingredients and ensure the water temperature is right for activating the yeast.

Mixing

  • In a large bowl or the bowl of a stand mixer, combine the bread flour, active dry yeast, and salt. Whisk together until mixed thoroughly.
  • Add the warm water and barley malt syrup or honey to the dry mixture. Mix until a shaggy dough forms.

Kneading

  • Knead the dough for 8-10 minutes until smooth, elastic, and only slightly tacky.

Rising

  • Place the kneaded dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm space for 60-90 minutes until it doubles in size.
  • Once the dough has risen, punch it down, flatten it on a floured surface, and sprinkle the shredded cheddar cheese and diced jalapeños evenly.
  • Knead the cheese and jalapeños into the dough until evenly distributed.

Shaping

  • Divide the dough into eight equal pieces, rolling each into a rope about 8 inches long. Overlap the ends slightly and press down to seal.
  • Place the shaped bagels on a parchment-lined baking sheet and let them rise for another 20-30 minutes.

Boiling and Baking

  • Preheat the oven to 450°F (232°C). Boil 8 cups of water in a large pot and add baking soda.
  • Gently drop the bagels into the boiling water for 1 minute on each side. Remove with a slotted spoon and return to the baking sheet.
  • Optional: Sprinkle everything bagel seasoning on top of the bagels before baking.
  • Bake in the preheated oven for 20-25 minutes until golden brown.

Serving

  • Let the bagels cool on a wire rack before slicing. Enjoy them warm or at room temperature.

Notes

Avoid over-kneading to keep bagels tender. They pair well with cream cheese or avocado spread.
