  • 2 slices of bread or 1 English muffin

  • Avocado slices (optional)

Preparation

  • Gather all your ingredients. Measure out 2 eggs and 1 tablespoon of chipotle sauce. Have your bread or English muffin ready.

Cooking

  • In a bowl, whisk together the eggs, chipotle sauce, salt, and pepper until smooth.
  • Turn on your non-stick skillet and set the heat to medium. Allow it to preheat for a few moments.
  • Pour the egg mixture into the skillet and stir gently with a spatula. Cook for about 3-4 minutes until just set but still soft.
  • Remove the eggs from the skillet to avoid overcooking.
  • Toast your slices of bread or English muffin until golden brown.
  • On one slice of toasted bread or half of the muffin, pile on the scrambled eggs. Add cheese or avocado on top if using.
  • Place the other slice of bread or muffin half on top of the eggs.
  • Sprinkle fresh cilantro over the top if desired.
  • Serve immediately.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to 2 days. Reheat in a microwave or toaster oven.
