Preparation

  • Gather all your ingredients to streamline the cooking process.
  • Place the eggs in a pot, covering them with water by an inch. Bring to a boil and then cover, removing from heat. Let sit for 10-12 minutes based on desired firmness.
  • Transfer eggs to an ice water bowl to stop cooking.
  • Once cooled, gently tap each egg on the countertop and roll to crack the shell. Peel carefully.

Making the Filling

  • Cut each egg in half lengthwise and remove yolks into a mixing bowl.
  • Add mayonnaise, mustard, chili crisp, soy sauce, salt, pepper, and minced garlic to the yolks. Mash until smooth and creamy.
  • Taste and adjust seasonings with Sriracha, rice vinegar, or lemon juice as needed.

Assembly

  • Fill each egg white half generously with the yolk mixture using a piping bag or spoon.
  • Sprinkle with sesame seeds and garnish with chopped cilantro or green onions. Add red pepper flakes if desired.
